I tossed mine as a 'unitasker' (yeah Alton Brown) and just use my sieve these days. Which I've probably done twice in the last 2 years, haven't done much baking lately.

@Magnolia832: It's supposed help the texture and make whatever you're mixing easy to mix. For me it take out the lumps out of the flour if there are any.

@NannyB Us "slightly" older cooks were taught that without sifting the flour your baking would never be as good as it needed to be.. I was taught how to
bake and always used a sifter to do so... Nowadays no need to do so !!!! but these are
prized in antique shops !!!

The sifter adds air to the flour, to make fluffier baked goods. Or so 'they' told housewives. I had an old Six Roses cookbook of my mom's, I couldn't believe how obnoxiously they talked down to the readers.
